Shrimp Chitosan

Shrimp chitosan, often simply referred to as chitosan, is a natural biopolymer derived from chitin, a substance found in the shells of crustaceans such as shrimp, crabs, and lobsters. Chitosan is obtained through a deacetylation process in which chitin is treated with an alkaline solution, usually sodium hydroxide, to remove acetyl groups. This process results in chitosan, a white, odorless, and tasteless powder.
